#KA – Marcus Lewsley – Chilli Beef Ramen

What you need ….

– 1x 8oz Sirloin steak
– Olive oil
– 150g Ramen noodles
– 600ml Chicken Stock
– 2 tbsp Teriyaki sauce
– 2 tbsp Sriracha chilli sauce
– 100 g beansprouts
– Handful coriander
– 1/2 an Onion (roughly chopped)
– 1 Lime (quarted)
– 1 Red chilli (sliced)
– 4 Spring Onions (sliced diagonally)

Method ….

Bring a pan of water to the boil. Add the bean sprouts and allow them to blanch for around 3-4 minutes, drain and refresh with cold water & place in a bowl until serving.

Bring the chicken stock to the boil in a pan and add in 2 tbsp of sriracha chilli sauce & the juice of 1/2 the lime, stir well. Place in the noodles and allow them to cook until tender.

Meanwhile … Season your steak then place a tbsp of Olive oil into a griddle pan and bring it to a high heat. Fry the steak on each side for around 2 minutes (longer for medium etc) then let rest for a few minutes.

Once rested brush the Teriyaki sauce over the steak and then slice on the diagonal.

Pour the Ramen noodles into a bowl along with the stock. Add the beansprouts onto one side, then place the Coriander, Spring onion, Chilli & Lime on top.

Rest the steak on the other side and there you have it ! Wagamama inspired chilli beef ramen.
